Burrata, Basil, Crispy Egg Sandwich

Today I offer you a poem and a sandwich. I hope you enjoy them both.

First, the poem:

Wild Geese

You do not have to be good.
You do not have to walk on your knees
For a hundred miles through the desert, repenting.
You only have to let the soft animal of your body
love what it loves.
Tell me about despair, yours, and I will tell you mine.
Meanwhile the world goes on.
Meanwhile the sun and the clear pebbles of the rain
are moving across the landscapes,
over the prairies and the deep trees,
the mountains and the rivers.
Meanwhile the wild geese, high in the clean blue air,
are heading home again.
Whoever you are, no matter how lonely,
the world offers itself to your imagination,
calls to you like the wild geese, harsh and exciting —
over and over announcing your place
in the family of things.

And now the sandwich:

Burrata, Basil, Crispy Egg Sandwich

Cut two generous slices from a hunk of large-crumbed bread. Slide them into the toaster, until they are warm and crisp.

Meanwhile, slice a tomato and some avocado. Pluck a few basil leaves free from the stem. Pull open a ball of burrata; you can use one for 4-6 sandwiches.

In a non-stick pan hot with butter or olive oil, fry an egg, 45 seconds per side. Sprinkle the cooking egg with salt and pepper.

Lay the toasted bread on a cutting board. On one slice, smear the avocado; dust with salt and pepper. Layer the: basil leaves, tomato, the burrata, and the egg. If you like, dress the egg with hot sauce. Close the sandwich. Cut it in half through the middle, so that the egg yolk opens and sauces the sandwich. Enjoy warm.
